According to experts, it is better to use the ones with the low sides. In fact, if you have no sides or rims at all then you should make use of these. The high sides will keep every piece to brown and get cooked evenly which can present a problem once it is done. If you already have high sides for your sheets, then you can turn it over and make use of the bottom part as the cooking space.

You have to remember that the dough still needs to expand while it is baked. So it would be better to have something with a bigger space to cook them with. This does not only let you cook more. But you have to remember that it should be in accordance to the size of the oven that you have.

There are also types that you need to stay away from. For a beginner, it is better to consider this early on so that you will not make frustrating mistakes onwards. It would be best to choose lighter colored ones. The darker ones will make the batch burn and brown more than what you anticipated. And as you know, most people are not very fond of over browned cookies.

It is also important to avoid the shinier ones. If it has a shiny texture then it would reflect light. And if this is the case, then it would be a problem for you because the temperature can increase. The cookies would get cooked faster than what you expected. Because of this, you will have an over browned result that is not really favorable for the taste buds.
